Rémy Martin V.S.O.P. Fine Champagne Cognac is a French V.S.O.P. cognac made from eaux-de-vie of the Grande Champagne and Petite Champagne crus. The house has been known for its blending since 1724, and the spirits are aged in oak considerably longer than the legal minimum. It is 40% ABV, in a 0.05 l bottle. The palate is rich and velvety: ripe apricot, juicy peach, sweet vanilla, liquorice and a light touch of oak. The finish is long, warming and layered. Serve at room temperature or lightly chilled in a tulip glass or snifter — the narrow rim concentrates the aromas. Let it breathe for a couple of minutes and sip it as a digestif; over a single large ice cube the strength softens and the fruit comes forward. At the table it suits dark chocolate, truffles, nut and caramel desserts, ripe pears, grapes, walnuts and almonds, and a cup of black coffee.
