Paulaner Weissbier Dunkel is a classic dark wheat ale (dunkelweizen) from the Munich brewery Paulaner, whose history goes back to 1634. It brings together the freshness of a traditional wheat beer and the full taste of dark malt. The beer is unfiltered, so it pours slightly hazy, deep copper to dark amber. The aroma is complex: ripe banana from Paulaner's own yeast interweaves with caramel, toasted bread, light clove and barely perceptible cocoa. The taste is velvety and full-bodied — the malt sweetness of caramel and dark bread balanced by fruity esters of banana and dried fruit, with hop bitterness almost absent. The texture is soft and creamy, with an abundant lasting head and high carbonation that make the beer easy to drink. Serve at 8–10 °C: chilled too hard, the beer loses both aroma and flavour. Pour it into a tall, narrow wheat-beer glass rinsed with cold water — slowly, at 45 degrees — and at the end swirl what is left in the bottle and pour the yeast sediment into the glass. Its natural partners are Bavarian: Weißwurst and fried Bratwurst with braised cabbage, a salted pretzel, Schweinshaxe pork knuckle, roast duck with apples or prunes, smoked fish. Among cheeses, Gouda, Emmental, aged Cheddar, Brie and Camembert; among desserts, apple or cherry strudel, chocolate mousse and brownies.
