Paulaner Weissbier is the benchmark Bavarian wheat beer, brewed in Munich since 1634. Top fermentation and a large share of wheat malt give it a golden hazy colour and a thick creamy head. The palate weaves together notes of ripe banana, mango and pineapple with light spicy touches of clove; hop bitterness is minimal, and the bouquet is refreshing and balanced. Chill the bottle to 6–8 °C: at that temperature the fruity and spicy esters open up while the beer stays refreshing. Pour it into a tall, narrow wheat beer glass (Weizenbecher) that tapers towards the base: it holds the head and concentrates the aroma. Rinse the glass with cold water, tilt it at 45 degrees and pour gently without swirling; leave 2–3 cm in the bottle, swirl it firmly to lift the live yeast, and top the glass with that foamy remainder. Serve it with Munich white sausages (Weißwurst), sweet mustard and a fresh salted pretzel, with pork knuckle, ribs and grilled sausages, with grilled white fish, baked trout and prawns, and with young soft cheeses such as mozzarella or goat cheese and light salads with a citrus note.
