Pálava Pozdní sběr is a semi-dry white wine from Moravia in the Czech Republic, made from the native Pálava grape of the same name. The Pozdní sběr category means late harvest: the fruit is picked fully ripe, which gives the wine its density and concentration. The nose is intense and multifaceted: ripe exotic fruit such as lychee, passion fruit and pineapple, sweet acacia and rose blossom, honey and light spice. On the palate it is unctuous and juicy, its gentle sweetness balanced by lively acidity, with a long, fruit-driven finish. Serve chilled at 10–12 °C. It pairs with fruit tarts and apple strudel, blue cheeses such as Roquefort and Gorgonzola, lightly spiced Asian dishes and pâtés.
