Mondoro Brut is an Italian dry sparkling wine (Spumante) in its recognisable faceted bottle. It comes from Piedmont and Veneto in a Brut style, built on traditional Italian varieties used for premium sparkling wines. The nose weaves ripe green apple, white pear, candied citrus and delicate floral shades. The palate is dry and well structured, with a pleasant creamy texture, a fine persistent perlage and a bracing mineral, citrus finish. Serve thoroughly chilled at 6–8 °C in a flute or a tulip glass: the narrowed rim gathers the fruit and floral aromas and keeps the fine bead going. It works as an aperitif and pairs with oysters, scallops, fish tartare and king prawns, grilled white fish, sushi, canapés and soft goat cheeses.
