Matsu La Jefa is a premium Spanish dry white from Toro. The name means «the boss», and the label shows an elderly woman in a straw hat, a tribute to the older generation of growers. The wine comes from old vines of indigenous white varieties, chiefly Malvasía de Toro, some of them more than a hundred years old; long barrel ageing on the lees gives it an oily texture and unusual complexity. The bouquet is layered and harmonious: ripe yellow fruit — peach, pear and yellow plum — with white flowers, honey, buttery pastry, vanilla and light toasted almond. The palate is broad, enveloping and deep; balanced acidity keeps it fresh, and the long, warming finish leaves traces of spice and ripe fruit. Pairs with fine fish — roast halibut, Chilean sea bass, salmon steak in cream sauce — with lobster, crab, large grilled prawns and scallops, and with roast poultry with herbs or duck in fruit sauce. For cheese, choose aged hard styles, mature goat's and sheep's cheeses, or creamy blues. Serve at 10–12 °C, not colder, and let the wine breathe for about half an hour.
