Malibu is a Caribbean liqueur built on light white rum with natural coconut extract, usually 21% ABV. The palate is led by soft, creamy ripe coconut woven with the warm tones of cane rum. The texture is gentle and the drink goes down easily. Serve it neat over ice — fill a low rocks glass with ice and pour 50 ml. It mixes readily with juice: pineapple (the classic pairing), orange or cranberry, and also with cola. It is the base of a Piña Colada with light rum, pineapple juice and coconut cream, and of a Malibu Bay Breeze. At the table it suits tropical fruit, vanilla ice cream, light mousses and cheesecakes, and prawn skewers.
