Region: Languedoc-Roussillon, France. Grape varieties: A classic Mediterranean blend, usually including Syrah and Grenache. Vinification: The grapes are picked during the cool hours to preserve freshness. Direct pressing or a short maceration is used to obtain an elegant colour. Fermentation takes place in stainless steel vats at a controlled temperature. Tasting notes: The wine shows a pale pink, salmon colour. The aroma is a complex bouquet of red berries (raspberry, wild strawberry), citrus (grapefruit) and subtle floral and spicy notes. The palate is rounded and fresh, with good structure, minerality and a long, harmonious finish. What it goes with: Excellent with Mediterranean dishes, steamed fish, tapas, light charcuterie and spiced dishes. Serving temperature: chill to 10–12 °C.
