Joseph Faiveley Bourgogne Pinot Noir 2021 is Burgundy classicism from Domaine Faiveley, founded in 1825. A regional Bourgogne AOC wine drawn from plots across the Côte de Nuits, Côte de Beaune and Côte Chalonnaise; part of the blend spends 12–14 months in oak in the cellars of Nuits-Saint-Georges, which lends structure without covering the freshness of the fruit. The colour is clear and bright ruby red. On the nose, a fresh bouquet of red fruit — raspberry, cherry, redcurrant — with light oak notes of vanilla and spice and a delicate hint of earth and undergrowth. On the palate the wine is fresh, rounded and fruity, the tannins fine and silky, a light minerality adding depth and the finish staying long. Pairs with poultry — roast chicken with herbs, magret of duck in berry sauce, quail — as well as grilled pork loin, veal chops and pâtés. Mushrooms are a particular success: porcini risotto, pasta in truffle sauce. For cheese, choose Comté or Morbier. Serve at 12–15 °C; 30–45 minutes in a decanter will do the wine good, in wide Burgundy-shaped glasses.
