Inedit Damm is a beer created by the Catalan chef Ferran Adrià (of the restaurant El Bulli) together with the brewers of Damm, specifically for haute cuisine and food pairing. It is a blend of barley malt and wheat with coriander, orange peel and liquorice. The taste is complex, creamy and refined, with fruity and spicy notes. The beer was conceived as an alternative to white wine, and it is served like one: chilled to 6–8 °C, kept in an ice bucket and poured into a white wine glass filled about halfway. Pour it gently, keep the creamy head and let it breathe in the glass. Its spice and citrus notes underline sushi and rolls, salads with a citrus dressing, and grilled white fish, prawns, scallops and squid. It also goes with soft, creamy cheeses — goat's cheese, camembert, brie — and with dishes built on light acidity, herbs and exotic spices.
