Domaine du Mage 2021 «Cerisier Sauvage» is a dry red from Côtes de Gascogne in France, a blend of Merlot, Syrah and Pinot Noir. The name means «wild cherry» and captures the wine's juicy, berry-driven character with a hint of spice. On the nose, ripe wild cherry, blackberry and blackcurrant with nuances of warm spice. On the palate it is balanced, fresh and rounded: the silky tannins of Pinot Noir complement the soft weight of Merlot and the spicy frame of Syrah. The finish is long and fruity, with a pleasant berry acidity. Pairs with duck breast in berry sauce, roast veal or rabbit, pasta with meat sauce and lasagne. Among cheeses, choose Gouda, Brie or Camembert. Serve at 15–17 °C in wide red-wine glasses.
