CVNE Monopole Clásico Blanco Seco 2019 is a historic dry white from Rioja, made entirely from Viura. It is produced by Compañía Vinícola del Norte de España by an old method: ageing in old oak casks with the addition of a small share of sherry, which gives the wine its singular style and its capacity to age. The bouquet is complex and many-sided: ripe yellow apple, pear, quince and white flowers, alongside the almond, walnut, yeasty pastry and light saline-honeyed notes that such ageing brings. The palate is elegant and dry, with a creamy texture, bright refreshing acidity and a very long mineral-and-nut finish. Pairs with fine white fish — halibut, turbot, roast sea bass — with octopus, grilled squid and large prawns, with roast chicken with herbs and duck, and with Spanish jamón and seafood tapas. For cheese, choose aged hard styles and medium-aged goat's cheeses. Serve at 10–12 °C, opening the bottle 30–45 minutes beforehand.
