Crémant de Limoux Blanc de Blancs comes from Limoux in southern France, the historic birthplace of sparkling wine. Blanc de Blancs means it is made only from white varieties: Chardonnay alongside local Blanquette and Chenin Blanc, by the traditional method with secondary fermentation and bottle ageing. On the nose, green apple, citrus, white flowers and a hint of fresh brioche from time on the lees. The palate is refined, with a creamy texture and clear freshness. Serve at 6–8 °C in a tulip-shaped white wine glass — a narrow flute keeps the aroma closed. It pairs with oysters, scallops in cream sauce, goat cheeses and roast white meats: rabbit, chicken breast, veal.
