Carignan 100 Ans d'Age «Carignan, Mon Amour» by Claude Vialade is a dry red from Languedoc-Roussillon in France. It is made from 100% Carignan off old vines up to a hundred years old; the deep root system of such vines is what gives the wine its concentration and depth. The bouquet is rich and juicy — ripe cherry, plum, dried fig and semi-dried blackcurrant — alongside the spice of Provençal herbs, black pepper, liquorice and a light smoky edge. The palate is full-bodied and velvety, with pronounced fruit sweetness, powerful yet soft tannins and a long, warming finish. Pairs with meat from the coals — lamb kebab, steaks, pork ribs — as well as beef stew, braised rabbit and duck, cassoulet and shepherd's pie. For cheese, choose aged Manchego, Pecorino or Cheddar. Serve at 16–18 °C, letting the wine breathe for 30–40 minutes.
