Pet-Nat Wizard Chinuri is a Georgian pét-nat from an independent grower: a white dry sparkling wine made by the ancestral method, bottled while still fermenting so that it carbonates naturally. It comes from Kartli and is made from 100% Chinuri, unfiltered, with natural sediment and no added sulphites. The aroma is fresh and distinctive: ripe yellow fruit such as apple, pear and quince, candied citrus, light yeasty and bready notes, and fine herbal, mineral accents. The palate is lively and crisp, with active yet delicate bubbles, high bracing acidity and a dry, faintly saline finish. Serve at 6–8 °C in a standard tulip-shaped white wine glass; a narrow flute is too tight for this wine. Stand the bottle upright beforehand so the sediment settles, and open it carefully, as the pressure can be high. It pairs with pkhali, aubergine with walnuts, khachapuri and lobio, grilled prawns, mussels and white fish, vegetable salads and carpaccio.
