Pet-Nat Pétillant Naturel France Carod is a French natural white sparkling wine made by the old country method, Méthode Ancestrale, with no artificial carbonation and minimal intervention. It is 8.5% alcohol, with a delicate sparkle. The aroma is fresh and unpolished in the best sense: ripe yellow apple, pear, white meadow flowers, plus the light yeasty and bready nuances typical of unfiltered pét-nats. The palate is crisp and juicy, with lively but gentle bubbles, pleasant acidity and a refreshing finish. Serve at 6–8 °C in a standard tulip-shaped white wine glass rather than a flute; the wider bowl lets the aroma open up. Stand the bottle upright before opening, and decant it if you prefer the wine clear of its sediment. It pairs with bruschetta, olives and vegetable pâtés, prawns and mussels, and young goat or sheep cheeses.
