Barrister Old Tom Gin is a British Old Tom style gin, its character softened slightly by sweetish notes. The aroma is led by juniper, spice, fresh citrus and fine hints of meadow herbs. The palate is soft and balanced, a little rounder than a dry London gin, with a warming finish. Serve it well chilled or over a few ice cubes in a rocks glass, or in a wide balloon glass that holds the botanical aromas. In cocktails Old Tom suits the historic classics — Tom Collins with soda, lemon juice and syrup, or a Martinez. For mixers take Indian tonic, ginger ale or soda with a wedge of lime or cucumber; for food, canapés with red fish, prawns and olives, soft goat cheeses and cream cheeses with herbs.
