Barrister Dry Gin is a classic British dry gin with a clean character and a rich botanical make-up. The aroma is bright and refreshing, with tones of wild juniper, spice and coriander and light accents of citrus peel. The taste is dry and balanced: spicy herbs and juniper give way to a clean, bracing finish. In a Gin & Tonic it is mixed with Indian tonic at 1:2 or 1:3, with plenty of ice and a wedge of lime or cucumber or a sprig of rosemary, and served in a wide balloon glass or a rocks glass. Well chilled, with a couple of ice cubes, it is also good neat, and it is the base for a Dry Martini, a Negroni and a Tom Collins. With gin are served lightly salted red fish, prawns, canapés with caviar and mussels, olives, light goat's and young soft cheeses with herbs, wedges of lime, lemon and grapefruit and fresh crisp cucumber.
