Appleton Estate 12 Year Old Rare Casks is an aged Jamaican rum at 43%. On the nose, honeyed molasses, dark sugar, toasted oak, orange peel, vanilla and light coffee. The palate is dense, oily and warming, with ripe fruit, cocoa, nuts, molasses and spice. The finish is long, elegant and slightly dry, with a woody trail. It is best neat at room temperature from a rocks glass or a tulip snifter, given a couple of minutes to open; one large cube or a few drops of water soften the strength. It pairs with dark chocolate from 70% cocoa, caramel and pecan desserts, black coffee and a cigar, and also makes a base for a rum Old Fashioned or a Mai Tai.
