The Dalmore 12 YO Sherry Cask Select is a Highland single malt Scotch. It first matures in American white oak, building a vanilla-and-honey base, then finishes in Oloroso and Pedro Ximénez sherry casks. The colour is deep amber copper. On the nose, ripe citrus, bitter chocolate, raisin, spiced baking and oak. The palate is velvety and harmonious, with candied orange, forest berries, caramel and sweet spice. The finish is long and warming, with spice and oak. Best neat as a digestif at room temperature, from a tulip glass (Glencairn) or a snifter. It pairs with bitter chocolate, nut desserts or aged cheeses.
