An elite craft cheese from the Netherlands of exceptional quality Reypenaer VSOP is a model of what the tastiest cheese should be This cheese matures for at least two years and loses about 35% of its original weight. The white spots we see on the surface mark the beginning of the crystallisation of minerals and proteins. The aroma and taste are superb.
