Dead Man's Fingers Spiced Rum — a British spiced rum born at The Rum & Crab Shack, a bar in St Ives, Cornwall. The bouquet is bold and bright: saffron, spicy clove, ripe vanilla, cinnamon and a light accent of orange caramel. Its full flavour carries the rum neat — in a rocks glass over a couple of large ice cubes that soften the strength and let the whole spice palette open up. In mixes its classic partner is ginger ale or cola with a wedge of lime, and it stands in for the usual spirit in tropical and warming cocktails. Serve at room temperature or lightly chilled, in heavy tumblers. It suits desserts of dark and milk chocolate, brownies and caramel pastry, fresh pineapple and mango, orange slices dusted with cinnamon, and meat dishes in spiced or sweet-and-sour sauces.
